Need some rocket fuel to get you going in the morning? Green smoothies are an excellent way to cram more fruit & veg into your diet 1st thing but it is really important to make sure that they also contain some healthy ‘good’ fats* to keep your blood sugar levels stable & prevent you heading for the biscuit barrel at 11am!
200ml coconut milk*
400ml fresh filtered water (chilled)
2 Tbsp almond butter*
½ cucumber (unpeeled & include pips)
1 avocado* (cut in half & scoop out flesh)
1 small eating apple (roughly chopped)
2 celery sticks (chopped)
Juice of 1 lemon
2 large handfuls of dark green leafy veg (e.g. spinach, chard, kale, rocket, watercress etc)
2 tsp spirulina (optional)
Place all ingredients into a blender and blend on the highest setting for 30 seconds.
Keep refrigerated in a tight lidded container & use within a day.
